Mary is a chef, recipe writer, researcher and designer with a passion for connecting people to eachother and the planet through food!

Plants and community are her main inspirations: she works with community gardens and food organisations in London to turn locally grown crops and discarded wholesale produce into meals for vulnerable members of the community.

Her research work looks at how food has shaped past and present human cultures, and their relationship to the earth. And how equitable, symbiotic and biodiverse food systems can be applied to her own menu design and practice.

She has a fascination with flavour and investigating food pairing combinations, this is exemplified in her pastry portfolio where she has created multiple desserts for restaurant menus and commissions: celebrating complimentary plant flavours and textures.
